Lambert was described as the "top chef in [his] field". He owned a restaurant in Paris with no name (referred to as "The Restaurant With No Name"), where philiospher Jaques Derrida regurlarly dined. He viewed the restaurant industry as "little more than a fat pig, endlessly regurgitating and consuming that which it eats without descrimination, without taste, without joy".
